Ryan,
I have a small cow/calf operation (55 head) in Middle Tennessee. Obviously, I have no idea what is wrong with your cow. I think that it would be good to call a vet for a more definitive diagnosis.
I HOPE this is not the case with your cow, but I'll tell you about one of my cows who died about a month ago. She had cancer. Specifically, she had lympho sarcoma. One of the symptoms of this kind of cancer is swollen lymph nodes that are visible if you look closely. My cow aborted a calf that was about 3 months along and then just went down hill over about a one month period of time. She ran a fever of around 102 - 103 degrees. She went off feed, and lost a great deal of weight.
You would be very well served to check her temperature and notice her feeding habits before calling a vet.
Good luck. Hopefully, your cow just has some bug bites.
