Mourning doves here in SC year around. Hunting regulations about them interesting. There is a season a week or two long in the fall, maybe another one sometime, don't hunt them so not sure. You can't hunt over a baited field but doves don't show up in any numbers except over a baited field. Therefore, the legal way to do this is to plant brown top millet timing things so that the seeds are mature by hunting season. Then two things may be done. One, cut the field for hay and bale the hay a day or two before opening day. Doves will come to to get the seed shattered out on the ground. Or you can just bush hog the field knocking all the seed on the ground.
Another method is to plow the field and plant wheat heavily just before opening day. some of the seed will be "spilled" on the ground during the planting process. If everything is done right there will be a crop of wheat next spring.
This was the procedure last time I had any information on it, rules may have changed, like I say, I don't hunt them.
