I like 40% remember pork in mine keeps its' moist don't be afraid to add a little extra. I like mild Italian venison sausage it comes out real good. Remember venison comes from climbing the Mountain, deer meat is shot on the road. I had to go pee so this is why it's the middle of the nite, I might just as well throw a log on the fire. Let us know how yours turns out later on.
