O.T.I think C.R.S. has kicked in, can't remember how much pork i mixed with deer meat to make sausage. Want to make about 20 pounds. Already looked every place i could think of.Don't want to get in trouble with Kim, but with the people on here so knowledgeable, thought i could find some one who could help me out. Many thanks in advance Ken

Old "cheater" recipe I used years ago suggested 1/2 pound hickory-smoked bacon to each pound of venison. Not sure about the other seasonings the recipe called for, except for lemon pepper...but it sure made some good breakfast sausage!!!

When I was young my dad used to 'dry' part of the venison he would kill, like dried beef (sliced real thin). It was tinted kind of a shiny green/blue and looked terrible but tasted good. I would take a handful of that, go hunting, munch on that all day with nothing elser but water and not get tired or hungry. Of couse I was young,10 feet tall, and bullet proof but it seemed that that dried venison was sufficient. I've heard of no one else who dried venison.
Any one out there BTDT??

I bone out a large Boston Butt and weigh it. Then I add the same amount of weight in lean venison and run it all through the grinder.

chief, I heard yesterday on Paul Harvey something interesting. When hunting wild game witha shotgun they are now selling shotgunshells laced with seasoning. When the animal is shot it is already seasoned because they disolve on contact with the meat.

depends on what you want... we just put seasoning in deer burger and fry in shortening.. otherwise mix small amounts till you get it how you want by frying a cake at a time.. then go with larger amount. i don;t like mixing it myself and have raised three kids and have been eating it three times a day.

I like 40% remember pork in mine keeps its' moist don't be afraid to add a little extra. I like mild Italian venison sausage it comes out real good. Remember venison comes from climbing the Mountain, deer meat is shot on the road. I had to go pee so this is why it's the middle of the nite, I might just as well throw a log on the fire. Let us know how yours turns out later on.
