I've experienced a similar problem with a loader that used the upright tower for a resevoir. If the lift valve was pushed into detent allowing the loader to free-fall (as opposed to powering it down) the exhausted oil would return to the resevoir faster than the pump could return it to the opposite side of the cylinder. The resevoir would overfill and shoot out the fill cap. However, this would only happen if the resevoir was a little over full to begin with. Foaming oil is aerated if it feels like oil when rubbed between your fingers. If it feels like shave cream and is tacky then it has water in it.
