Yes, pressure plates can absolutely be re-surfaced. But like a brake rotor, there are minimum thickness dimensions that need to be followed. Heat distribution is a consideration, and when they get too thin, heat doesn't dissipate and they will warp. Also, there needs to be appropriate clearance for the mounting bolts, as the heads are recessed. Any reputable clutch or engine shop will be able to do it and also make sure that it is within specs.
