I would remove the seat bracket & battery box & have that cleaned up & pre-painted like you fenders & sheet metal. Clean the tranny top cover & pre paint below where the battery box & hydraulic lines are. Remove the steering wheel to prevent any damage, other wise I would say you have pretty much done everthing else.
Taking the fast hitch apart to paint I beleive would be un-necessary, I used a 4 in angle grinder with wire brushes to clean mine up on my 300 & I was very happy with the results. May become too time-consuming to finish in time, lots of parts there.
What color are you going to paint the axles? Metal gray or black, I've seen both & personally prefer black, but to each his own. I beleive they were originally painted red from the factory with the rest of the tractor.
I have also seen where the front rims were masked off & painted silver, and the centers left red, looks sharp, but again I beleive they came from the factory red also.
I have been following your project since you started, thanks for sharing, excellent results so far, give all your "helpers" a big thanks also. THAT is one major amount of (team) work. Definitely will be the best looking 560 around, congrats in advance.
