I have gotten the gray after condensation in spring when temps/humidity run high and the cast is still cold. I got gray when I resleaved an F-14. it dissapearsd after awhile, I suppose as the sleaves settled in. A large amount of water (why I resleaved the F14) foams new oil to almost whitish green. I agree that the oil and filter should be replaced. If the gray comes back, Did the head get retourqued after the engine was run up to temp? Was the head gasket put on correct side down. Was the head and block cleaned thouroughly? I hope it is gunk getting flushed out. It is a good posibility it is. Change your oil and keep an eye on it.
