Head Shaving questions

What is the maximum you can shave off of a M head?(it is a low compression head) I have step head pistons in there right now. Can the head still be shaved? Another question is the line up of the Carb and Governor. Will the tube that holds the shaft to operate the carb be out of wack after you shave the head? Will the holes and bolts line up? Is there any other things I should think about that I may be missing? Thank you for any help!!
