Some interesting ideas here but the reason is much more simple. Fruits and veggies get their flavour from their mineral content. As the minerals go in to the plant, they come out of the soil. (some dispute as to how long it takes the soil to become depleted of all minerals but many farms have been around plenty long enough for this to happen) In fact without minerals, nothing will grow at all, so it was discovered that there are 3 minerals required to grow big beautiful vegetables (tasteless because there are 60+ minerals left out) so those minerals are all that are replaced. Potassium is one i can't remember the other two just now, but i would assume farmers would (unless its already in round-up nowadays) These minerals are added back to most gardens with manure and such so taste never seems to suffer even when not vine ripened.
