John Deere M cooling system

Just thought that I would let everyone know how the tractor was coming. I installed the new fan bearing and reassembled the tractor. I put straight water in the radiator and started it up. I warmed it up by driving it full-throttle in 2nd gear for about 2 miles. The guage read just shy of 170F. I checked the water in the radiator with a candy thermometer and it showed 160F. After cooling down, I drained the water and put in a 50/50 pre-mix. After warming it up in much the same way that I did before, the temp guage read 200F! This was verified by the candy thermometer. Why the temp difference? Also, the ambient temperature was WARMER when the water was in. Do I need to just run straight water? What about water wetter? Thanks for all your help.
