Not to be insulting , but the first mistake is to not to buy the parts from the shop that is doing the work ,that is a good way to ruffle the feathers . Second thing is ,if the seats you bought were all 45 deg ,then he didn't have much choice but to make the valves match. You can regrind the angle on the seat , but that lowers the valve into the head and defeats the reason for replacing the seats. All said , machine shop should do the parts ordering after disassembly , that way you get the right parts .
