I am in fairview, just west of nashville.
Got all 10 killed scalded and gutted.. Hung up to cool out over night.. Today will be the hard job.. Trimming, cooking lard, grinding sausage, and etc.
Good thing is we cooked two shoulders from hogs we killed two weeks ago.. They are going to be good for eating today..
We have a scalder set up. All the hogs scalded good.
Time to get back to work.. I see my help is starting to show up this morning.
