I always have done it underneath the tractor. I just park it in soft plowed dirt and then dig out the loose dirt in the "work area" to give more room. Pretty "redneck", but worked for me.
Like I said, I've never done an 800, but from looking at them in the past, I would guess you'd even have more "wiggle room", with lighter duty components up under the cab.
We tried it from above the first time, but the dash was pretty much in the way, anyway, and I didn't want to ding anything up inside, anymore than it gets in normal usage, so we've just gone from underneath since.
Also, just FYI, a couple of times it wasn't the clutch per se, that I had to replace, but the grease hose inside the bell housing had broken loose and let it burn out the throwout bearing... So I've had to "practice" a couple of times for an otherwise preventable problem.
The worst part is that clutch assembly probably weighs 80-90 pounds and getting it placed up on the bell housing rim is the hardest part. I threw the shot put in college, though, and I've still got just enough of that conditioning to help me out... ha...
It only takes a couple of hours once you've done it a time or two...
