The horsepower jumps a bit from an 8n to a hundred-series Ford. The 8N's 119ci "L-head" engine produced 27hp- 92ft/lbs (max). The 1953-1958 134ci "Red Tiger" engine (used in the Golden Jubilee, NAA, 600 and 700 series) produced 31hp- 110ft/lbs (max). In 1955 Ford introduced the 172ci "Red Tiger" in the 800-series, at 45-50hp. More horsepower is cool, but figure out what you honestly require. There are a heck of a lot of 8N's out there, merrily doing all of the jobs you describe.
The Golden Jubilee, NAA and hundred-series tractors all have the "live power," or "live action" hydraulic system. Certain models of the hundred-series had the "live," or engine-driven, PTO as standard equipment, instead of the transmission-driven PTO. The live PTO was available as an option on models equipped with the standard transmission-driven PTO.
One model is about as stable as the other, except for the 700- and 900- series "tricycle" rigs. They are alll adjustable in track up to around 76"-84". If you are concerned about roll-over, consider aftermarket ROPS. Although the 1953-up tractors are going to be heavier than the 8N, you will be just as squashed by an 8N as an 800.
