Ten to twelve years ago a friend of mine who had two beef cow herds, eighty head each, one spring calving the other fall calving. He was always on top of things trying different methods. He stated he wanted to try one more thing before he retired and that was bison. He developed a herd of forty cows and liked the experiment. It all ended when his health deteriorated and he got out of the business for that reason. My take is that his major regret was that the price of the bison was much higher when he got in than when he got out. He liked the ease of calving, 40 pound calves. My understanding is that the cows can be expected to produce until they are 35 years old. Bison will eat feed such as old hay that beef will not.
The bison meat that I have eaten was juicier than beef and I liked it better. A veterinarian friend of mine pointed out that the area of beef cattle that the prime cuts come from, do not have the ample amount of meat on them in the bison, that the cattle have.
