You're right, chickens (and all birds that I know of ) have a gizzard. Not much makes it through whole, but the smaller the seed, the better the chance it could make it through.

The weeds would most likely be spread through what the birds scatter around the feeder, not by what passes through.

Horses are easily bored (like 8-yr old kids), and will nibble & munch simply for something to do.
