A few years back I put some sort of caustic crystals into my septic to clear out the drain field. I don't recall the exact brand, but I bought several cans of the stuff from a local hardware store. I assume it's supposed to convert the grease into soap , but it would take a lot of lye to clear out all the grease in a badly neglected septic field. I my case, I can't say for certain that it helped, but I did see bubbles coming up from the septic field. What did help, I think, was to clear out most of the trees around the field. Not only do they block sunlight, but their roots can clog your drain pipes. The other thing that helped was having two sons move out, cutting down on the septic volume by about half. One thing you can do that will help is to divert as much "grey water" as possible from the septic. If you can run your washing machine drain out into the yard you'll really cut down on the volume going into the septic tank.
