The engine supplies the heat. The radiator allows the heat, with the aid of a fan, to expell the heat into the atmosphere. The thermostat regulates water flow from the engine, to the radiator, by a temperature sensitive spring, that opens a flap, to allow the heated water into the radiator. The water pump moves the water. If you remove the thermostat, you allow the water to circulate, without spending enough time in the radiator, to cool down. Often times removing the t-stat will cause an engine to over-heat. The t-stat will also leave the water in the engine long enough to get the engine up to operating temperature, then begin to open, to keep it at the recommended temp. Most t-stats are in the 160 to 210 degree operating range. To make a long story short, it is a valve, of sorts, to control the flow of water through the engine and radiator. Hope this helps.
