I think someone wrote a story about this situation-Does the "little Red Hen" ring a bell?? enough of the smarta**remarks. Seriously what you are considering doing with the "custom farming" idea is not terribley unlike what I and a lot of other guys do on a large scale and it can get to be a nightmare. It's tough to be all things to all people-while you're over plowing Joe's 2 acres Bob is wondering why his 10 acres is going to weeds and needs some attention. Not saying it won't work, but it takes someone with the patience of Job, the diplomacy of Churchhill and the communication skills of Dale Carnegie to pull it off successfully. It may be worth trying a year but in the end don't feel bad if some of the people bad mouth you for your efforts. Just walk away smiling, say "Thank you for the opportunity" and do twice as much for the few that will be happy with what you've done. BTDT.
