Choosing 2 stage vs. 1 stage compressor

I'm puzzled about how people choose between 1 and 2 stage compressors. I can find machines of each type with roughly 17 CFM @ 90 PSI. From reading on the web I see Pros of 2 stage: more reserve capacity (same volume of air at higher pressure), thicker receivers (last longer...doesn't sound convincing). Cons: higher cost. Am I missing some other important difference? The tools I know about (HVLP, sanders, even blast cabinets) would seem to do fine on 18CFM@90. Is there some application (in a non-industrial setting) that requires pressure near 175?
