You probably have the stock ONE-WAY hydraulics.
That's ASSUMING someone didn't cobble something together that's totally non-stock. A picture would help us identify what you have.
The knob is supposed to have a lever on it. Someone broke it off in the past. It would normally have three positions:
1. back = lift
2. center = hold
3. forward = lower
I just got done explaining this in another thread, but here's how to add 2-way hydraulics:
1. Get an open center spool valve and mount in a convenient location.
2. Run a hose from one of the outlet ports on the rear of the reservoir (not any of the pipe plugs that go into a flat side of the block) to the IN port on the valve.
3. Hose from the OUT on the spool valve to one of the pipe plugs on the side of the block. There's a 1" pipe plug on the back where the christmas tree valve would normally mount.
4. Run hoses from the work ports to the rear of the tractor and add quick couplers.
To operate, you would pull the lever on the side of the reservor back and lock it there, then run your spool valve normally.
In your case you need to fabricate a lever, weld it on, and see if your system even works.
