Personally, I would do a cyl pressure test on each cyl to confirm or deny leakage into cooling system. You said you resurfaced the block, how is the sleeve flange height now. Was counter bore changed to maintain proper sleeve flange height. Reusing a head gasket is not a good idea as the compression rings of gasket on sleeve were crushed into place and most likely will not seal correctly. Has it ever been done , sure, but not good practice. Pressure testing will show up a leak though if done properly. If that checks out, I would pressurize cooling system with pan off and look for anti freeze leak from below. The one thing I would not do is just put on a new head gasket without first doing some diagnosis.
