You took the hose off between the motor and the top of the radiator. The t-stat goes first in the metal neck of the motor end. The inside of the neck should be machined with a bit of a ridge to hold the edge of the stat. It likely will rattle around a little bit but not fall in.
As for which way it goes . . . I'm not sure what kind of replacement they gave you, but if it has one side that has something of an arch with a spring on the opposite side, the spring side goes toward the head, and the arch toward the radiator.
Did they have the spring retainer clip I described last night? Once the thermostat is in place, just compress that clip so that it fits into the neck and guide it down until it snaps into the recess that should be there to hold it. That will keep the flow of coolant from washing your thermostat into the tank at the top of your radiator or, at the least floating around in the hose.
