Re Torqueing a Cylinder Head

I was wondering what the best way to re torque a head is. After it has a few hours of runtime on it, do you back the bolts off and them re torque? Or do you just set the wrench and tighten them clockwise only, as if to see if any bolts backed off? Just wondering Thanks scott#2
