Martin, I have used 18 guage to rewire several portions of my tractors with no problems. Most of the wiring carries very little current with the exception of the battery cables. I think the wire you are referring to is to power the ignition and I believe the lights so you might be on the safe side and use 16 guage on that one, but for the other wiring carrying the power to individual components 18 should be sufficient and readily available. Opinions may differ, but this is mine. As far as quantity you might want to take some measurements and allow for some extra.
