Pulled the head...everything looks good..Now what?

I popped the head off of a 1941 Farmall H that sat in a guy's field for who knows how long. The pistons and sleeves look BRAND NEW! I am baffled. When I pulled the Oil Pan plug, 1-1/2 gallons of water rolled out of there, followed by the nasty black stuff you all know of well. Can I pour water in the block to see if it leaks? How do I check the head for cracks? I guess I am perplexed as to how the water got in? I fear a cracked block but maybe I will get lucky. I want to put on a new head gasket, bolt everything back on, rebuild the carb and fire it up. Is that a dumb move? How do I find out where the water came from? Water was very clean. Pistons and sleeves look fantastic! I am stumped! Any ideas? Thanks, Scott
