A Jacobs brake is a mechanism that uses the engines oil pressure to hold the exhaust valves open. When you take your foot off the throttle there is still enough fuel going to the engine to idle the engine.By holding the ex. valves open this fuel not being used therefore slowing the truck. This fuel is igniting in the exhaust manifold which is why the loud noise.
