I have a Swiss steer that I have raised from birth, on nothing but grass and milk. He will be 2 years old opening day but his mom just weaned him about 45 days ago. I am going to butcher him soon and 2 sides of the family are interested in meat. I am keeping a quarter, mom wants half and G'ma/G'pa want a quarter. I am giving a quarter to my mom as a gift for her recent wedding but have no idea what a good rate would be for the 2 other quarters. I am not looking to make a bunch of money, maybe even less than market because of family, but don't know what would be a good price. I am going to do the butchering and take the quarters to a shop to have them cut up. I want to sell the meat at a per pound price for hanging weight, then they will pay for their own processing. Any ideas from ya'll what would be fair? Thanks ahead.

I sell a few home raised beef critters, hard fed on ground ear corn and hay. Sell them at top of the beef market. This fall I got .90 per pound plus $20 for delivering to a butcher shop, grossed over $1200 per 1400 pound critter.

I get $2.00 per pound and they pay everything after I deliver it to the slaughter house . I dont think you`ll find a slaughter house that will let you kill , gut and skin it then bring it in for prossesing If that`s what you want to do . They have to be inspected during the prosses .

You mean you get $2 a pound live weight and the customer is still paying the processing? You could make $1000 per cow doing that.

You might want to be careful about butchering your self and taking somewhere else to get it cut up, There is a guy that used to do that for his family. USDA threatened to take him to jail for butchering for anyone but for his own use on his own farm! He was GIVING it to his old maid sisters. Not selling it, giving it away. He did not have the proper permits to do this, so be careful of who you tell this to and check with the local shop and see if they will cut the quarters up after you butcher it. As for pricing, look at the local stockyard prices, then adjust it according to how much it was on hoof compared to hanging weight and adjust accordingly. If the calf weights 1200# on hoof at 1.00 per pound, and if you get 700# hanging weight, take 1200.00 devide by 700, $1.71 per pound.

I was just using that price as an example, It was easy for my little pea brain to figure using round figures. I do not raise cattle any more, so I do not know what they are selling for right now.

I sell mine at $2.50 a lb and pay for all cost. you could easily sell for $1.75 to $2.00 a lb and be fair. Good hamburger will cost more than that down town. Walt
