I'm thinking of bypassing a defective thermocouple(?) switch (may be hard to find a new one) for a cooling fan for an hydraulic coil, and replacing it with a manually operated 12v. toggle switch. Anybody experienced with something like this? Thanks.

I have done that with no problems. It is wired directly from the battery with an in line fuse, so I have to remember to turn it off. If I did it again, I would consider wiring in a red warning light to indicate it is on. So far, I have always remembered.

JC Whitney has reasonable priced adjustable fan control switches of a few types online...
If I remember correctly one even hooks into the radiator fins...

Getting one for my tractor, replacing the mechanical fan with an electric one, so I can reverse it in summer to blow forward. also handy to clear some chaff from the radiator.

Should be a piece of cake, bypass what you call thermo couple, (I think that you mean temperature limit switch).
And just find the feed that goes to that switch, and tap into it for your toggle switch.
