O/T-pickleing eggs

Well since my chickens seem to be giveing us a good number of eggs lately my wife wants to pickle some of them. Do any of you have resipes for doing so and or ideas????

I just toss them in the brine left when I finish a jar of pickles. Come to think of it, I have some in the refrigerator about 3 or 4 years old. They should be about right any day now . . . .

Hey Old,
My wife Connie pickles beets from our garden every year. She just adds some vinegar & water tot he pickled beets and puts the hard boiled peeled eggs in the mixture in the fridge for a couple of days. Darn things don"t last long around here is the only problem.

Ed, You're makin' my mouth water!!!! I have a Cholesterol problem so I can't eat too may eggs, but I think I'd have to have a few of yours!!

Here is the recipie i use

1 1/2 doz. eggs 4 TB. canning or pickling salt (unionized) 4 red chili peppers 2 bay leaves white vinegar

Boil the eggs till hard, peal and place in a large jar. Make the brine from the rest of the ingredients fill the jar with vinegar enough to cover the eggs. proses by putting the jar in a large kettle fill the kettle with water and boil for 60 to 90 minutes you have to put a rag under the jar so its not on direct heat. remove from heat and let them cool you can eat them right away but there better after about two days you can add more peppers if you like them hot

Add a can of pickled beets for a really nice pink color for your eggs. Some dill seeds and pickling spices make them even better.They will keep a long time if you use pure vinegar and store in the fridge.
