OT; potatoes at the store

Hi, At this time of the year, I wonder about the potatoes I buy. I'm in Ohio and just bought some good taters. the bag says they are from ND from a gricery stroe, but I am wondering, how do they keep so well this late in the year? they look great when about 1 month ago, some others didnt kee well. Any potato farmers out there - Do you use cold storage? Also, where do onions come from this time of the year? Were they in storage too?

Potatoes are often sprayed to keep them from sprouting.

Here in western NY we still have Potatoes raised last year stored in the Laundry room and they are as good quality as when we put there in Oct.temp has been pretty much at about 45 degrees,they will start to sprout soon especially the reds .some of the reds are sprouted now.Onion Capitol of the world here in Elba , still pulling onions out of storage ,very good quality ,will be good for at least another month,ship all over the country

I believe onions come from Mexico or South America
this time of year.

they are frequently, but not always sprayed with a fungiside and formaldahyde to preserve storage time and prevent eyes. Mike

Potatoes can be kept in storage pretty much year around with todays technology. they need to be stored in a dark enviroment and held at a temperature of about 42 degrees to keep them from sprouting or turning green. spuds can be stored through the winter in non refrigerated cellars but to keep them in storage after March you need to have high tech storage facilities that can monitor temps and humidity and automatically compensate for changes in either condition.
