OT: beef recipes?

The neighbor and I split a steer, so now I have 350+lbs. of grass-fed beef coming in either Thusday or Friday. Anybody got a recipe they'd like to share? :)

Actually, it's important that I sell my wife on this meat. She's a city girl who doesn't like the idea of eating beef that she used to see walking the pastures. The more delicious the recipe the better.

If I can win her over, we'll probably start slaughtering our own steers again on a regular basis.

It depends what cut your going to cook. A shoulder roast, bottom round roast in the oven, or a london broil on the grill or broiler, use this recipe, will tenderize as well as season. Place the following in a ziploc bag to marinate your roast. Roast, or London Broil soy sauce 1/2 cup, add crushed garliic two table spoons, 3 tablespoons ground horseradish. Let marinate couple of hours. For a roast put 1 inch of water in a roaster pan place roast in pan. Gentle pour marinate over the top salt and pepper to taste. Top with slices of a yellow or sweet onion. Place in the oven if a roast, at 350 for aprox. 1 1/2 hours (4-5lb roast), If a London Broil take out bag and grill 5-10 min each side depending on thickness, under the broiler or on the grill. For a prime rib use same recipe with out horseradish, no need to marinate ahead
of time just pour over top add water to roaster pan, preheat over 500 degrees put roast in oven 1 hour at 500 degrees AND DO NOT OPEN OVEN FOR 4 HOURS FOR 7-8LB ROAST. Let me know if you have any questions. Would like to know what you guys think of the recipes

Pastured beef is very trendy these days. Look up some info on omega-3 vs omega-6 fatty acids and grass fed beef, e.coli 0157, search for an article titled "Power Steer" from the new york Times. She'll never eat feetlot beef again.

You might start out by explaining that grass fed beef won"t have any estrogen. I"ll bet she hasn"t ever been stepped on by a cow or pooped on or peed on either. Changes your whole outlook on walking food.

Now I can think about eating again.....

Hand cut filet over a bed of mesquite charcoal. Side of well, almost anything, but I am partial to baked potatoes and broccoli.

Beef brisket marinaded in french dressing for a couple days then cooked slow in a roaster pan.

Yankee potroast - perfect for city people. Cook in a roaster pan in the oven. Look in your Betty Crocker cookbook. It was made for city girls.

Chuck roast - a nice big roast with onions, carrots, peppers, and thick sliced potatoes. Cook all day in a slow cooker or big crock pot.

Just cook it slow and gentle, respectfully, and it will win her over all by itself. Once you get the taste of home grown beef, it will kill you to buy that lousy grocery store stuff!

Never ate grass feed beef.
