O/T any of you guy can tomatos??

If you do, do you have any special things/ways you do them up. I'm canning 3 gallions of this today and want some more ideas of way to do them. So far I have can slasa and whole tomatos and also sause with onions and garlic and just some more ideas on what I might add when doing sause which I'm doing again today.
Thanks. Also how many of you men do it?? I know some of the women might but do any of the men do it??

Old, Have you or any of your friends cold packed beef & pork .We lived on a farm & mother canned beef & pork. She put it in Mason jars and stored in the basement with no refrigeration. Of course it was cooked somehow before it was canned or cooked in the jar.I haven't had any of that for over 40 yrs. But it was very good. Earl In Illinois

We usualy can a couple o'dozen every year along with corn and peppers.The easiest way we found is to blanch,peel and put into food saver system.

I love the taste in the winter of home canned tomatoes. I do juice, chuncks, salsa, and my own version of a chili starter mix, with pepers onion, garlic and some bay leaves. Kind of make me look forward to cold weather

I have done the canning several times with good luck,but last year all the jars popped the seal after about a week. Think the tomatos had too much acid.

We just scald them peel them core them quarter them and then throw em into a quart jar with a tablespoon of salt. Makes the best chili and stewed tomatoes in the winter too. My mom makes her own spagetti sauce and tomato soup to can but that takes some work.

Yup!
These are my favorite veggie. We put up 20 cases this yr. We grow heirloom Manalucies (heat tolerant) and the small Italian plum tomatoes. Manalucies for fresh eating, salsa, stewed, plain etc. Plum tomatoes for sauces and juice.

My favorites are stewed with onion, peppers, and garlic or tomatoes and okra.

I do the growing, the boys and I do the picking and the wife and I do the water bath canning. I do the pressure canner as she is scared of it.

I taught her how to can foods as she is an ex-city girl. Now she frets when the pantry starts to get low on canned goods. Ain't nothing like the taste of summer in the dead of winter.

We can and freeze most vegies and some fruits. I have not tried my hand at meats but I do own a pressure cooker. I plan to try this next yr. after I collect some good recipes.

My wife cuts them up and I put them in the juicer, If thats what you call it. I do this outside because juice goes everywhere. She makes juice for chilli but we used to make ketsup. She says that is to much work, but it tastes soo good.

I can most of our tomatoes. I make salsa and sauce, some with onions, peppers and garlic. I pick into 20# lug boxes, stack until the green ones ripen to red.
I rinse off the dirt in a plastic mortar mixing tub, cut out the bad parts and pile them in a 10 gallon pot. I use a ladle to take out the clear juice as they cook. I run the cooked tomatoes through a Squeezo (brand name, others work too) which separates the skin and seeds from the pulp.
I heat the sauce again, pour in quarts and process in a steam canner for ~10 min. When I do salsa, I add some vinigar to maintain acidity (sometimes add a bit of sugar to keep it from being too sour). I do ~160-200+ lbs. a year. My wife likes whole tomatoes - they are nice but don't make much sauce when cooking. Ray

I do tomato juice, sometimes my wife helps, but usually it is just me. I start by washing the dirt off, cut the big ones into smaller pieces, and then drop them into the blender. Run the blender just long enough to sort of puree them. If I want the juice for chile, I will drop one whole jalepeno pepper in for each blender full. Next, strain the whole mess through a collander and into a large kettle. Place the kettle on the stove and cook until you have tomato juice. Pour the HOT juice into jars and screw the lids on. You're done. I do not pre-heat the jars, and I do not pressure cook the juice. Now all that's left is to clean up the mess and throw the pulp out to the chickens or hogs if you have any.

Yep the chickens get the left over parts and pieces. I do keep tring to figure out if I really save any money by canning but at least I know I don't have chemicals in my food

Good to hear someone else is workin also. Today I am making microwave apple sauce it's fast and you cann't burn burn food in the mic.6 cups of apples--1/2 cup apple juice --1/3 cup of sugar or to your taste , microwave on high 15-18 min. after 8 min stop and stir , and mash. Put all your apples in a glass dish with a glass lid to start. !!! RED NECK secret to taste real good cut apple juice in half and add Irish Wiskey!!!! Try and have fun!!

We do Salsa, Spaghetti Sauce, Tomato Juice, Stewed Tomatoes, Whole Tomatoes, Tomatoes with peppers and onions, Green tomatoes, Chili Etc. My wife cans I help sometimes.

We do canning here too. Put up 54 pints of beet relish with garlic a few days ago. Today our son came over with 24 lbs of venision, we ground it up and put in a marinade, tomorrow we will run it through a jerky shooter and into the smoker at 200 degrees for 2 + hours till done. Will use hickory for some and mesquite for another batch. We also jerk strips and can some. Oh, we have about 20 qts of tomatos and 10 juice put up. No beans this year. Salsa is next. Bob

My buddy's had a bad time with kidney stones this last month. Then my mother gave him a big bunch of stewed beets and beet pickle because had left her a supply of bass fillets. He feasted on the fresh beets, but his first night-time visit to the bathroom nearly produced a heart attack! He thought he was bleeding, and that his kidney stone had returned. Eventually he realized that it was just the beets.

His report of this greatly amused my 80-year-old mother.
