Have a field that I am considering putting a dry dam in to help control erosion. Are there any web sites that tell how to install them or can any of you give me some tips. I have a backhoe but have never installed one before.

Here is a site that may help you out with technical assistance. www.nrcs.usda.gov this is their job to help lay out structures.

You may want to check with your local USDA office if you haven't already as that would be the obivious place. They are more familiar with soil conditions in your area. They will also design it for you and recommend the location I'm sure. Otherwise you will be getting a bunch of advice (good & bad) from this forum that may not apply to you.
That being said, I would also check U of I's agricultural web site for their recommendations.
