O.T. - Bacon

This may sound weird, but can any one explain why in the U S you can't get back bacon? All you ever see is what we in the UK call sreaky. What happens to all the back bacon which is larger slices, more meat and not as crisp. Even American or Canadian ham for breakfast is not the same! TIA, Chris.

i think you may be refering to what we call fatback . ..... ..... ..... ..... ..... ..... ..... ..... ..... ..... ..... ...

What we used to call back bacon, we now see it as peameal bacon. Help stamp out pigs, people: eat up.

I'm also in the UK and use a local butcher who cuts my bacon for me into 3/8" - 1/2" slices like bacon steakes, smoked or green. Wonderful with pineapple.

I think that over here we have always sold the loin as a much higher priced cut than it would bring cured and smoked as bacon. I have a customer in Perth, Scotland that I go see a couple of times a year. They put me up at a hotel in Perth called the Royal George. They put on a breakfast that would make any cardiologist rub his hands together with glee. Lots of eggs, back bacon, oats, kippers, and tea. Back bacon is good, but I don't think the average American housewife would want to pay for it. American bacon is $2.00-$3.00 per pound right now. How much is your back bacon? Jim.

This is a new one to me. Bacon (sow belly) comes from the belly. Bacon square-jowel, from the jaws. If it cames from the back it would be pork chops or canadian bacon (rib eye). Or is there some thing over the sholders like a hump on a beef?

Most butchers will custom-cut your bacon any way you want it. When we go camping, a buddy often brings a slab of their home-cured bacon with him and we cut off our own. One year he went a bit overboard--I swear if they had left the feet on that bacon could have whupped a grizzly bear....

That is news to me, I buy it all of the time in the stores around here, it is a little more expensive than regular bacon, but worth it.
