Brad,
One of these three will have the pedal you are looking for, if you're looking for the cable type.
They are used in dragsters and circle track cars usually.

Look for companies that make the stuff for junior dragster NHRA.[I just checked a Jegs catalog and dont see them] but ive seen them for that class racing.

They make them for boats, might work for you. Hotfoot or something I believe is what they are called.
