How tough is changing the wiring harness on my 300 utility? The wires are horrendous. Is it out of my league? Why do I have three wires going to my selinoid on the new harness, when the old one has only two?

Some of the 350's (& maybe 300's) with 12 volt systems had a harness with an extra wire such as yours. Wired a s follows: Red - attaches along with battery cable to large stud on solenoid. Orange - attaches to small stud on solenoid likely marked "S". The other wire color is "natural" and attaches to other small stud on solenoid. The other end of this wire would attach to coil "+" post. This allows the coil to have full 12 volts during starting, but after engine fires it would run on 6 volts. I believe these had a keyed ignition switch with a push button start switch. An operators manual usually has wiring diagrams in them and I would recommend the purchase of one. It would explain this much better than I can. Good luck!!

quite easy. There should be a main battery wire to one terminals of the solenoid. then there is one from the harnass that goes on that same terminal, then a smaller one for the "trigger" on the solenoid. not sure what the extra wire is for, but if it has documentation saying it goes there, put it there, they might have just wired the harness slightly different.

That's part of the problem- I do not have any written diagram to follow. Is that where I should start?

Rewiring from a rats nest of off color taped up wires is more of a process challenge than a technical one. Bob M wiring diagrams in the archives (search for box above), and a manual will be essential (top left on this page)
Solenoid wires
Hs have various starter mechanisms. None (to my knowledge) came with a solenoid. If you hav a push button start, or a key start system, here is your answer. Change to a 12 volt with 4 terminals. looking from top down with the terminal end of the device away from you, put the battery cable connection, and the power wire to the amp gauge, on the left terminal. The next terminal is probably a small one labeled S this gets the wire from the key or push button to start the tractor. The next terminal is probably labeled I it is to be connected to the coil side of a ballast resistor (if your coil is designed to ues one, or you are using the 6v coil which needs the ballast resistor Mid 60s chev, or chrysler will work).
If your 12v coil is labeled "no external resistor required" then leave this terminal naked. If you have a ballast resistor, or are going to use one, the wire from the Key or "on off" sw that powers the coil should hook to the other side (non-coil side) of the ballast resistor)
The purpose of the I terminal is to bypass the resistor when starting to allow for voltage drop from the starter, giving a hotter spark at cranking. Good luck I hope it helps,
JimN
