Where do you check the fluid level on a 350U. I found the large hex plug for adding fluid, but I cant find what level it should be at. The manual doesnt state anything...

The information that I found in the manual is in the lubrication section, pages 36-37. I don't know if your manual is the same or not.

There are two drain plugs, the big hex plug toward the rear of the tractor, and a smaller plug up toward the center of the tractor. There actually two fill plugs, one just up from the big rear drain plug, and the other just up and back from the front drain plug. Both are about 6" - 8" up from the bottom on the left side of the tractor.

Be a little careful when your are filling it. I had both fill plugs open and when it started coming out, I still had a half a funnel full of oil. It took 10 pounds of kitty litter to pick up the overflow off the floor.
