When I converted my M to a 12-volt alternator, I used a 12-to-6 volt step-down resistor to maintain 6 volts to the coil and distributor. Would I be better off to remove the step-down resistor and install a 12-volt coil?

The step-down resistor protects your ignition points from premature wear. 12+ volts to the points will have you changing them quite oftem due to rapid contact erosion.
My son"s M with 12 volts & step-down resistor is still on it"s 1st set of points after the conversion.
Why do you think GM, Ford, Chrysler, etc. all used a resistor on their 12 volt point- condenser ignition systems?? To prolong the life of the points is why. They had a resistor by-pass designed in the starter solenoid or starter switch so full battery voltage would be available for starting. Since the starter draw left only 10.5 or less volts for ignition purposes, the points never saw a full 12+ volts.

The 12 volt coil merely has the resistor built in. It is encased in the coil. AS MB said, switching to a 12 volt coil will not improve performance. The installation does look cleaner with a 12 volt coil, though.

If you want to see an improvement with the 12 volt system, install a solid state ignition system. The breakerless system allows more current to flow through the coil, thus giving you a hotter spark. Even with this, I doubt your performance will improve noticeably, compared to a well-maintained original points system. Solid state ignition does maintain its tune longer, which save a little in the long run.

Yes but not woth the cost. You would obviously eliminate one component which could at some time cause trouble but the performance would not be improved
