I want to add on an additional hydraulic pump to my 1941 farmall M. I will probably drive it off of the fan belt, or generator belt. The question I have is, what size and type of hydraulic pump should it be. There are a lot of pumps out there. I just want to be sure I buy the right one.

Depends on what you hope to accomplish. A common power steering pump will do more work than you could imagine if it is set up properly. I don't know if you will find one with enough pressure to handle a front end loader or even raise a 3 point hitch, but it may be possible. If you are considering a power steering pump, look for one from a heavy truck.

IMHO, you're not going to be able to belt-drive a hydraulic pump of any decent capacity. The best you'll be able to do is a power steering pump off a truck or car, and those won't do jobs like running a 3pt or loader.

The tractor that my family had some years ago had a front end loader on it the pump for the loader was mounted on the the front of the tractor and ran off the crank shaft and I think it was a 18 gpm gearpump did a very good job for the loader ; but it needs to be protected with a heavy steel grill in front of the pump

Bear in mind that you knock the HP down about 5 when running an extra pump. May be no big deal, but I thgought I would mention it.
