I got the pump, gears, front plate and front cover from a SM to go on my M. Should I replace all the timing gears, or just the cam gear and magnito gear? Any advice or things to watch out for would be appreciated_tricks to pulling the gears or cautions about the timing.

I wouldn't change all the gears, no real need to. The cam gar is a "light press" fit. Usually comes off easily after taking off the nut and lock. Has a half moon key in it. Timing is fairly easy with front cover off. If you don't have an IT or service manuel try to find one you can look at or copy that page from. One thing to watch is not to break crankshaft pulley when you take it off, try to put even pressure on it near the center. Remember to put oil slinger back on before you put on front cover. You may want to change front seal while there, especially because the one you have in the new front cover is an unknown. Someone else will have to tell you how the magneto is hooked to pump as mine has a distributor.
