Also, you've probably seen "Certified Angus Beef" in the grocery store - where the Angus (black) is a selling point. The way the USDA is grading meat, it is easiest to grade prime, yield grade 1 with Angus or AngusX (higher grade, better price). Generally, Hereford genetics seem to have fallen out of favor these days...Maybe the "prejudice" against red coloring ties into that? In Idaho / Eastern Oregon, black cattle also tend to bring a slight premium. Guess what color my feeder steers are?
