Check and make sure the sensor side of the thermostat is facing the hot side in the water jacket. Test your thermostat before installing it. Borrow your wifes best meat thermometer and place the thermostat in shallow water on the stove. Watch till it starts to open and make sure it opens fully. THEN turn the heat off and add a little cold water at a time and see when it closes. Don't be surprised at what you find most thermostats don't even come close to working properly.As for air pockets drill a small hole in the side of the thermostat about 1/16th in diameter. Most stats have a crease in the seat area to let the air out. In our old race cars we would drill the hole out pretty big to aide in refilling the engine with water.
