what size radiator and where is the temp sensor loacted? a 4 core radiator with the temp sensor at the back of the left hand head will show alot of temp changes due to the fact that when the thermostat opens, the 4 core dumps in alot of cold water. takes some time to warm it all up, and the sensor reflects that till it balances out. mine has done that for years, and i have replaced motors, raditors, etc, not for that reason, but because the ones i had either went bad, or a deer ran into it(radiator that is). i noticed it more in cool/cold weather. just a thought.
