Take 4-6 taters and bake them like you would normally. But cut them in half first and if you do not do it this way wrap them in foil. Bake till done. Then pull them out and empty them out leaving a shell. Take the stuff you spoon out and mix with a 1/4 cup butter, milk as needed to make them smooth. Now for the best parts. Put in 2 or 3 table spoons of french onion dip, some bacon and or lunch meat cut real small and a couple table spoons of Jalapeno jelly or salsa if you do not have the jelly. also put in shredded cheese, mix well with a beater and then spoon into the shells and top with more cheese and bake at 400 for 20 minutes. Makes a single dish meal that is easy and good
 
Sounds good old, you grow your own potatoes? I do its pretty easy, You grow them too Larry, if your around today?
 
I us to grow my own but we do not use enough of them to worry about growing them any more. When I did grow them I would drop them on the ground and cover with hay or straw and that way they where easy to dig up. My wife prefers turnips over taters so I grow them instead of taters. Already been picking lettuce and have radishes and turnips an onions growing
 
Sounds like a great recipe, gonna try it when I get home. I too like Yukon Golds, great keepers. I have also grown Pontiac Reds and Kennebecs, which are good too.
 
I have done the normal run of the mill twice baked taters but this twist on them has them 100% better plus with all the extra stuff make them a balanced meal all in one shell
 
I have had goosd luck with the Yukon gold also, the red russets dont seem to grow as well here. I get more YG than the RR. I also wanted to ask you if you know anything about Colts Neck NJ , or Upper Saddle River NJ, I think it was, thats were the people who own the haose farm came from? J
 
Thanks Larry, I know they sold a house there in the mid 90s, guess they just blew threw the money.
 
The Jalapeno jelly really adds a twist to the mix. Gives it a sweet taste but no bite plus goods you the benefit of the hot peppers to boot
