I have been around this and want to do some. My hold up is an evaporator. Can't spring for a commercial one. $$$$$$$$ What options are there for small scale? (the kitchen stove is out!!!)

The longer you boil, the darker the syrup is going to be. All depends on what you like, how much time you have, and how much extra fuel you've got to burn.

For myself, I prefer dark "B" syrup over the clear A or AA "fancy" stuff.

Many people make syrup small-scale on single-pans and do fine with it. Some use pots on a fire and block wall around it.

If you could run your sap through an osmosis machine, and take out half the water before you start boiling, it makes things go much better. That doesn't work though, unless you've got a friend with an osmosis machine.

We used to use a very large pot, on and outdoor fireplace with a steel grate,,, assuming you have access to a ample supply of wood this is least expensive and keeps the mess outside.

First of all, DO IT OUTSIDE!!
Mosture from making only a few quarts of syrup will ruin a kitchen and half the house.

It can be done on a small scale without a big cash outlay. Go to a sheetmetal shop and have a flat pan made. Make a cementblock stove to set it on with a door on one end and a smoke pipe on the other end.

Not a high production setup but you can make all the syrup a family can use with it.

I have done this and have helped several get started this way.

Email me it you want more info.

Oh i forgot you need some hard maple trees to tap!

Soft Red Maples make pretty good syrup also. Red maple sap has more water content and takes a lot more boiling - but with some people, it's all they've got and works fine.

You are wise to start thinking about preparations now. Not as wise asking this board. Goto the forum link below for more info than you can read in a week. There is one board devoted to homemade production.
