Desert critters

A herd of about 6 Javalina on the side of the road. Caught these two before they ran off.

They are as tasty as any porker, and lean to boot. While camping in Sycamore Canyon south of Flag, my border collie Herded 15 of them through our camp site at 9:30 pm. Pretty interesting parade on the run. Jim
 
Coyotes don't mess with them. They are pretty vicious when threatened. They are very gamey and have to be treated with special care or the musk glands will contaminate the meat. The best way to cook them is in a pit. Although they have very poor eyesight, they will defend themselves almost as if by instinct. I had a dog get his throut ripped out by one when he went after one and another dog had a chunk ripped out of his side exposing the ribs.With tusks 3" long it's best to leave them alone.
