Fall/Winter Ground Cover Question

My mother in law has asked what she can use as ground cover on her garden for the winter. Apparently I am the all knowing source on such topics, however I have never experimented with such things. What would be a benefical cover for her to use? This is in Ne kansas where the first frost is just around the corner. Thanks, Erik
 
Here in central Maine I have been using Winter Rye and it is excellent. Already have had several killing frosts and I will be sowing several pieces today with the rye. Any time the temp. hits 40 or better, it grow. this year I have put down Oats in addition to the Winter Rye and it seems to work well. .... I'll tell you in the spring.

I have used Austrian Winter Peas. They are good cover and add a lot of Nitogen. Just used a JD 7x14 Hoe Drill to overseed a Bermuda pasture.

Winter wheat works well and makes it sort of look like a nice lawn in the winter. Then in the spring you just till it under and it makes good green manure
 
I put hairy vetch and cereal rye on ours here in southeastern Indiana and will plow it under with my wd45 in the spring. Suppose to put nitrogen back in ground also.
 
I use rye and its already up. I plow it down in the Spring if it isn't too tall. I will mow if its too tall and then plow it. Hal
 
Buckwheat is good. Don't let it go to seed. Our old time seed dealer died, and I haven't been able to find it for a couple years.
