Last fall I got a bunch of cabbage and when We just went to use it most was spoiled. What I want to know is good ways to store cabbage if I get the chance again next year. Had over a hundred pounds, way to much to keep in refrig.
 
I think storing cabbage for future use is what sauerkraut is all about. I don't know how it is made but I'm sure it is online somewhere.
 
I keep several cauliflower boxes of cabage in my barn cellar, it stores well till early spring, i keep it next to the door where its coldest as the cellar cools off i put it further down in the cellar where it is warmer, keep it above freezing but not much.
 
Out of all the cabbage I had we just made 2 crocks of 2 gal each of sourkrout, would have made 4 crocks if the outer parts of the heads had not spoiled.
 
Do you wrap the heads in any way, had heard to wrap the heads in newspaper but it was all soggy and with mold on.
 
Leroy, why do you wait so long to make your kraut? Is there a reason, or were you busy with other stuff?

We get about 24 quarts of kraut from 10 medium heads, but we don't pack the jars as tight as some folks do. We pick the cabbage and make the kraut immediately. Is the kraut better if you wait to process it?

Store it in the ground! Dig a trench about 2' wide and 2' deep, line it with straw, lay in your cabbage, and bury it with 4' of straw. Pack it down,cover with plastic, and weight it down. Saurkraut is a terrible thing to waste!
 
Definitely sauerkraut. Nothing like homemade crock sauerkraut. It'll keep in a cool/cold (but not freezing) room for at least several weeks. You've got to keep an eye on the fluid level in the container and replace evaporated water with brine when necessary. When packed down properly, we can fit about 40# into a 5 gallon crock with space to spare.

Cabbage could also be stored in some type of root cellar arrangement. Check with the Extension Service or your local library for root cellaring advice. I suppose you could also google it.

As a kid we always stored cabbage in a root cellar not packed too tight had to get air around it. We used it all winter and made kraut with what was left the next spring when fresh cabbage was available
 
We didn't even put straw in the hole- just buried the heads upside down in the dirt, with root sticking up. It would be slimy about 2 leaves in- we took a knife to the garden to trim it in place. Hold it by the root, trim off bad leaves, then cut off root and take a nice head of cabbage in to mom. 'Course, that won't work if your ground freezes in winter- we are in the balmy Pacific Northwest. Also overwintered carrots, beets and parsnips by just not digging them until we needed them.
 
When I was a kid. we stored it in the mow under chopped hay. Have no idea as to if it kept or not.
 
Don't think that would work here in Ohio with temps getting down to -20* with normal low about 0*. Ground freezes hard.
